    Been to the old country where my people are from, and the village bakers make big loaves of bread with really thick crusts (like a 1/4″ or more, really dark brown) and a lot of bubbles. The old way of doing things was that a family would bake their loaves for a week or more, because they’d have to use a communal oven. The thick crust acted to preserve the loaf. So there is something to be said for developing the gluten.
