From an osteopathic medical perspective, I’m concerned about the recommendation to use cow’s milk, as the proteins in cow’s milk has been known to cause Food Protein-induced Allergic Proctocolitis (FPIAP), an inflammatory condition characterized by sloughing and bleeding from the lining of Colon in the the first few months of life and resolving by 12 months. The prevalence is not well characterized but is approximately 17%.

If the milk (or soy) were denatured with heat, we might be able to avoid this problem, but I don’t know if this possible without ruining the milk. Since the recipe recommends un-pasteurized “raw” milk, we can assume the milk proteins are unaltered. The risk of intestinal infection from not killing harmful bacteria in the milk (as well as some admittedly helpful probiotics) is a separate topic.

    Thanks
